RAMAT RAZIEL, Israel - It's harvest time at the Domaine Du Castel winery and crates full of small, plump grapes the color of blueberries are being loaded into a machine that removes them from their stems and pumps them through plastic piping into a towering, silver-colored vat.
This is how the two-year process of wine making begins in a terra cotta-colored building that originally was a chicken coop and is now considered the producer of some of Israel's finest wines.
This year, the winery was awarded the much-coveted four-star rating in one of the world's premier wine guides, Hugh Johnson's Pocket Wine Book 2008.
In Israel, "there is a wine revolution going on when it comes to quality," says the founder of Domaine Du Castel, Eli Ben Zaken.
A former restaurateur, he began making wine as a hobby until the top wine taster at Sotheby's in London came across one of his bottles and, much to his surprise, declared it "an outstanding" find, Ben Zaken said.
Wines have been produced in these Judean hills, not far from Jerusalem, since biblical times. The remains of a wine press from the Second Temple period was unearthed near where Domaine Du Castel's grapes are grown.
But only in the past 25 years or so have Israel's wines begun to take off around the world, transforming the reputation of kosher wine from the syrupy kosher kid-dush variety to world-class vintages.
A key turning point in the "coming out" of Israel's wines came just last year when Robert Parker, a leading American wine critic, tasted more than 40 Israeli wines for the first time. He awarded 14 wines 90-plus scores on a 100-point scale. A major achievement for any winery, the scores signified an exceptional world-class product.

The highest score, 93, went to a pair of Israeli red wines: the 2003 Yatir Forest wine from the Yatir Winery and the 2005 Gewurztraminer Heights Wine Yarden, a desert wine from the Golan Heights Winery.
Israel's wines began their metamorphosis in the 1980s. Some Israelis began studying winemaking in places such as France and California, returning home with the expertise not just on how to make wine but where to make wine. They began planting fewer vineyards in Israel's low-lying coastal areas and more in higher-altitude regions like the Golan Heights, the Upper Galilee and the Judean Hills, where the climate has proved better for growing quality grapes.
The Golan Heights Winery, established in 1984, played an important role in the quality revolution of Israeli wines, bringing in expertise from California and raising the bar for other wine makers here, said the director of wine development at the Carmel Winery, Adam Montefiore, who also has worked at the Golan Heights Winery.
"The planting had been going on in the wrong places of the coastal plane, where the soil was not right and with grapes that were not the right varieties," Rogov said. "In the Golan Heights, the primarily volcanic soil is excellent for grapes and the chalky, volcanic red clay of the Upper Galilee is also very good."
The return of modern winemaking to the region began in 1882 with the investment in wineries in Zichron Yaakov and Rishon Lezion by philanthropist Baron Edmond de Rothschild. Police are looking for a 14-year-old girl who allegedly stabbed her 17-year-old brother with a kitchen knife, city police reported.
At 1:10 a.m. on Monday, Officer Ben Bradley responded to Lancaster General Hospital for a stabbing victim in the emergency room, police said.
Bradley learned that the boy had been arguing with his sister in a home in the 500 block of Manor Street when she stabbed him once in the right hip with a kitchen knife, police said.
The injury was not life-threatening.
Police did not locate the girl, but found the knife at the scene, police said.
Bradley is filing charges of aggravated assault and recklessly endangering another person against the girl, and a warrant for her arrest will be issued, police said.

SYDNEY (AFP) Thousands of Australians will let their tastebuds do the talking when they sit down later this month for "Vindaloo Against Violence", a mass dining event to protest attacks against Indians.
The brainchild of Melbourne digital media designer Mia Northrop, the grassroots campaign started as a humble event on social networking site Facebook but has exploded to more than 10,000 registered participants.
"We were looking for an idea that was the opposite of a boycott essentially, where you can go and embrace community, and this idea popped in my head," said Northrop, 24.
"It was a small gesture of going and dining at an Indian restaurant, but made powerful by the sheer number of people who would do it simultaneously," she told AFP.

A SOUTHMEAD family has been forced to live in their fire-damaged home for three weeks - because the council claims it is habitable.
Every room of Emma Furnivall's home in Danbury Crescent was left covered in soot after a fire in their neighbour's front garden.
The front of their home was left blackened, with cracked double- glazed windows, charred drainpipes and guttering was left hanging from the roof. Inside, net curtains were burned, the carpets had to be ripped out, and the stench of smoke was so bad Miss Furnivall and her two daughters had to move out for a week.
But the day after the fire, a Bristol City Council official told them their home was "liveable".
It was only on Tuesday - almost three weeks after the blaze - that the council offered to help after Miss Furnivall told them she would contact the Evening Post.
The 35-year-old said: "The surveyor came out the next day to assess the damage and told me it was liveable for me and my two girls.
"I thought they were going to put us in temporary accommodation, but he said the windows were only cracked on the outside so it was all right.
"No one came to clean the soot out until Tuesday, so the house has been black for almost three weeks.
"I am disgusted with the council. Would they come out here and live like this, in a fire-damaged house with young children?" A booklet for council tenants states that "the council must carry out urgent repairs which are likely to affect your health, safety or security".
Miss Furnivall also praised a neighbour who forced his way into the fire-engulfed house to rescue her daughter.
Anthony Lawrence broke down the door and snatched 13-year-old Elise Dixon to safety.
The terrified Henbury School pupil panicked as smoke filled the house, and her mum said if it wasn't for Mr Lawrence her daughter could be dead. Miss Furnivall said: "Thank god Anthony was there. He said he didn't think twice because he has children of his own, but bless him, he is my hero."
But modest Mr Lawrence, a father of three, said he was just happy everyone was safe and refused to accept he was a hero.
The 26-year-old tattoo artist said: "I couldn't leave the little girl in there.
"In the smoke all I could see was her pink dressing gown. She was crying so I just grabbed her and the dog, told her I was going to get her out and to close and eyes and hold her breath, and then ran out.
"Emma and her neighbour bought me a crate of beer to say thank you, and it was really nice of them. We are friends for life now."
Miss Furnivall is now desperate to get her life back to normal.
She said: "We were devastated after the fire, but I think myself lucky because Elise was safe
